What's Cookin' in the Homestead

I plan to post weekly menus as I get them together, but I will be the first to admit that some weeks I am more organized than others and indecisiveness is mine and Hubs' game.  So, let's just say this menu is subject to change and assume this is a general outline for my plan, knowing that plans aren't really my thing...  We'll see how this goes!

Weekly Menu: April 18 - April 24

Monday - Quinoa vegetable medley with fresh strawberries on the side

Tuesday - Chicken pot pie, yo.

Wednesday -  CPP leftovers

Thursday -

Friday - Date night :)

Saturday -

Sunday - Easter ^^

Dessert -

Weekly Menu: April 10 - April 17

Monday - Fresh spinach pasta with grilled portobellos and broccoli in a garlic cream sauce

Tuesday - Chicken enchiladas suizas  (Enchiladas were a bust, I forgot to have cream on hand and then          my chicken smelled wonky after it was thawed.  It just wasn't meant to be...I've moved on.  Sorry.)

Wednesday - Leftover enchiladas

Thursday - Ground buffalo lasagna and fresh pineapple

Friday - Date night :)

Saturday - Leftover lasagna

Sunday - ??

Dessert - We'll see what happens :)

Weekly Menu: March 28 - April 3


Monday - Portobello mushroom burgers with spinach and havarti, sauteed asparagus with parmesan

Tuesday - Fending for ourselves :)

Wednesday - Butter chicken with couscous and naan

Thursday - Quinoa pasta mix (beans, peppers cheese)

Friday - Date night (TBD)

Saturday - Leftover quinoa

Sunday - Chicken salad w/ apples, broccoli


Dessert - Strawberry Shortcake...Take 2!!


Weekly Menu: March 21 – March 28

Monday – Pizza (boring, not homemade, but Freschetta, which is close!!)

Tuesday – Chicken baked ziti with lemon parmesan broccoli

Wednesday – Leftovers


Friday – Date night, dinner out :)

Saturday – Dinner out or Portobello mushroom asparagus pasta

Sunday – Dinner out - YATS


Dessert – Strawberry Shortcake with fresh Florida strawberries and homemade whipped cream
